Valor Patrimonial da Gastronomia Portuguesa : impacto na satisfação dos Turistas no destino Porto

Resumo
A cultura portuguesa tem nas suas tradições gastronómicas um valor inestimável,
que muito tem contribuído para a valorização da oferta turística do país.
Portugal é considerado um dos melhores destinos da Europa para viagens de
gastronomia e vinhos e a gastronomia portuguesa revela elevados níveis de satisfação junto
dos turistas, que procuram fatores de autenticidade ligados à cultura e tradição dos destinos.
A oferta da restauração contempla um conjunto de variáveis associadas a uma
dimensão material, como o preço ou a segurança alimentar. Mas comporta também uma
dimensão imaterial, com componentes ligadas à cultura e história portuguesas.
Estas componentes intangíveis não estão, contudo, claramente assumidas como
sendo as principais responsáveis pela satisfação dos turistas com a gastronomia
portuguesa, sendo essa a análise que se pretende efetuar, confirmando o valor patrimonial
da gastronomia portuguesa em geral e da região do Porto e Norte em particular.
A análise estatística e correlacional das variáveis que constituem as dimensões
material e imaterial foi efetuada a partir de 381 respostas válidas a um inquérito por
questionário aplicado no aeroporto do Porto.
Este estudo demonstra que variáveis como a simplicidade, a hospitalidade, a ligação ao mar, o sabor e gosto, que constituem a dimensão imaterial da gastronomia portuguesa, são as que os turistas mais valorizam, as que lhes provocam maior satisfação, contribuindo
fortemente para o enriquecimento da sua experiência turística e sendo determinante na
intenção de revisita e de recomendação do Porto como destino turístico.
Portu guese culture has in its culinary traditions an inestimable value, which has greatly contributed to the promotion of tourism in the country. Portugal is considered one of the best countries in Europe as travel destination for food and wine and portuguese gastronomy has been revealing high levels of satisfaction among tourists, who seek factors of authenticity attached to the culture and tradition of their chosen destinations. Food and beverage business supply includes a wide diversity of variables associa ted to a material dimension, such as price or food security. But it also involves an immaterial dimension, with intangible components related to portuguese culture and history, confirming the heritage value of portuguese gastronomy in general, and the regi on of Porto and North in particular. The variables ́ statistical and correlational analysis that affects both material and immaterial dimensions was conducted from 381 valid answers to a survey applied at Porto airport. This study proves that the variables forming the immaterial dimension of portuguese gastronomy, such as taste and flavor, simplicity, hospitality, connection to the sea, among others, are the most appreciated by tourists visiting Porto and the North of Portugal, are the ones that ca use them the greatest satisfaction, strongly contributing to the enrichment of their tourist experience and are decisive in their intention to revisit and to recommend this destination
