A influência de mycoplasma gallisepticum na qualidade do ovo

Com o objetivo de avaliar a influência de Mycoplasma gallisepticum na qualidade
do ovo, estudaram-se 420 ovos provenientes de três bandos de poedeiras comerciais; dois
bandos infetados (60 e 102 semanas de idade) e um bando controlo (32 semanas de idade),
em três datas diferentes, num período compreendido entre 21.12.2011 e 10.01.2012. Após a
recolha, os ovos foram analisados laboratorialmente para os seguintes parâmetros físicoquímicos:
forma do ovo, coloração da casca, peso do ovo, casca, albúmen e gema,
espessura da casca, percentagem de casca, albúmen e gema, pH, ºBrix, percentagem de
extrato seco e viscosidade do albúmen e gema, coloração e presença de manchas na gema
e relação gema : albúmen. Analisaram-se os parâmetros microbiológicos: pesquisa de
Salmonella spp. e contagem de Enterobacteriaceae, Bacillus cereus e Staphylococcus
aureus, bem como parâmetros nutricionais – proteínas e lípidos – em laboratório externo de
referência.
Os resultados obtidos permitem afirmar que Mycoplasma gallisepticum parece não
afetar a qualidade do ovo, o mesmo não se verificando para o parâmetro forma do ovo. A
presença de múltiplos fatores, tais como: idade do bando, stress, realização de muda,
fatores genéticos e estados patológicos recentes, bem como reduzido tamanho da amostra
para os parâmetros proteínas e lípidos, poderão ter contribuído para a inconclusividade dos
resultados.
Este trabalho, pioneiro na avicultura intensiva de postura em Portugal, pretendeu
contribuir para um maior conhecimento técnico-científico das repercussões que a infeção
por Mycoplasma gallisepticum acarreta à qualidade do ovo.
Aiming to evaluate the influence of Mycoplasma gallisepticum in egg quality, it was studied 420 eggs from three flocks of laying hens, two infected flocks (60 and 102 weeks of age) and a control group (32 weeks old), at three different dates in the period between 21.12.2011 and 10.01.2012. After collecting the eggs, these were analyzed in the laboratory for the following physical and chemical parameters: egg shape, shell color, egg, shell, albumen and yolk weight, shell, albumen and yolk percentage, shell thickness, pH, ºBrix, solids percentage and viscosity of the albumen and yolk, staining and soiling of yolk and yolk : albumen ratio. It was also analyzed microbiological parameters, such as detection of Salmonella spp. and counting of Enterobacteriaceae, Bacillus cereus and Staphylococcus aureus, as well as nutritional parameters - lipids and proteins - laboratory external reference. The results have revealed that the Mycoplasma gallisepticum did not affect egg quality, however this does not apply to the egg shape parameter. Nevertheless, the presence of many factors, such as age of the flock, stress, performing changes, genetic factors and recent pathological conditions, as well as reduced sample size parameters for proteins and lipids, may have contributed to the inconclusiveness results. Pioneer in intensive poultry farming laying in Portugal, this work intends to contribute to a better understanding of the technical and scientific implications that Mycoplasma gallisepticum causes in the egg quality.
